Kristen Hard of Cacao Atlanta will be doing a two-day chocolate making and confection class at 700 Kitchen Cooking School in Savannah, GA. the weekend of October 23rd and 24th, 2010.
While most chocolatiers buy their top quality chocolate from major manufacturers, Kristen actually sources her own cacao beans and winnows, roasts, and grinds them herself to produce the chocolate she uses for her signature artisan confections.
Featured in the September 2010 issue of Food & Wine Magazine as one of their “Small Batch Superstars”, Kristen Hard has very quickly built a reputation for her “bean to bar” chocolates. As proprietor of Cacao Atlanta, a chocolate boutique in Atlanta’s Inman Park neighborhood, Kristen is one of very few small batch chocolatiers that actually produce their own chocolate from the cacao nibs.
Join us for this unique two-day workshop that will have guests actively participating in the process of making chocolate on day one and turning that chocolate into your very own finished confections the next day!

Part 1: The Art of Chocolate Making
From sorting, cracking, winnowing, and grinding, you will have a detailed sense of the laborious chocolate making process. Kristen Hard will pepper this session with discussions of her recent trip to cacao farms in Venezuela and why it is so vital to know the source of your beans. Guests will understand how the different pieces of machinery work and how to best maintain the integrity of the cocoa bean.

Part 2: The Art of the Chocolatier
Under Kristen’s guidance and instruction, students will learn the art of tempering chocolate, the difference between tempered and un-tempered chocolate and how this affects the look and taste of the final product. You will also learn molding, making and hand piping ganache and why the chocolate you use in these confections matters.
